Shrubs, also known “drinking vinegars”, have a long history going back to America’s colonial days, and across the globe from the Middle East and Asia where they have their own interpretations of the drink.  Combining fresh fruit, vinegar and a sweetener, and letting it go through it’s natural alchemical process, mellows out the acid and turns it into something tangy, refreshing and delicious.  Infuse fresh herbs and spices and mix with sparkling water and you have a healthful beverage with endlessly different taste combinations.

Want to preserve the taste of summer? Combine strawberries with lemon and thyme. Take ripe peaches and balance out their rich sweetness with fresh ginger. Combine figs and star anise, or blueberry and shiso.  We will talk about what herbs and spices to use that will balance your constitution while we make shrubs and taste different combinations.
